CHICKEN FAJITAS

Serves: 2

Ingredients: 

For the Salsa: 2 tomatoes. chopped, ¼ - ½ tsp Bart Chilli Flakes, 1 small bunch chopped coriander.

For the Guacamole: 1 ripe avocado, ½ tsp Bart Garlic Paste, pinch Bart Chill Flakes, zest and juice of ½ lime.

For the Fajitas: 1 large chicken breast, cut into thin strips, 2 tbsp Bart Fajita Blend, 2 tsp oil, 1 medium onion, sliced, 1 red pepper, deseeded and sliced, 1 lime, 4 flour tortillas, grated Cheddar cheese and sour cream to serve.

Start with the Salsa. Combine the chopped tomatoes, Bart Chilli Flakes and chopped coriander with a pinch of salt and set aside for the flavours to combine.

Then the guacamole. Mash the avocado with the Bart Garlic Paste. Bart Chill Flakes and lime and season to taste.

Don't make this too far in advance or it will go brown.

For the Fajitas, warm the wraps according to pack instructions. Heat the oil in a large frying pan. Toss the chicken in the Bart Fajita Blend then cook on a high heat for 3 minutes. Turn down to a medium heat, add the pepper and onion to the pan.

Continue to cook for 8 minutes until the veg is softened and the chicken is cooked through.

Fill the warm tortilla with chicken, salsa, guacamole and top with cheese and sour cream.

Easily doubled or tripled to feed a crowd.
